Ruby Vinson of Scaly Mountain, NC

Ruby Lillian Miller Vinson, age 87, of Scaly Mountain, North Carolina, passed away Thursday, August 11, 2016 at the Mission Health’s Owen Heart Center in Asheville, NC. She was the daughter of the late Jesse and Ethel Carpenter Miller of Scaly Mountain. In addition to her parents, she was preceded in death by her husband of 51 years, Tolliver Vinson: a son, Jimmy Vinson, grandson, Michael Wilburn, great-granddaughter, Miriam Thomas, sister, Lexie Miller and two brothers, Edwin and Everette Miller.

She was a loving sister to Scaly Mountain residents, Richard Miller and Elizabeth McConnell. She is survived by two daughters, Mary Jo Wilburn Dalton (husband Joe) of Franklin, NC and Marilyn Billingsley Carpenter (husband Leroy) of Scaly Mountain, NC and one son Buster Vinson (wife Linda) of Highlands, NC; five grandchildren, Kevin (Monica) Vinson of Highlands, NC Joey Billingsley of Jourdanton, TX, Karen Wilburn (Dewayne) Thomas of Franklin, NC Kelly Vinson (Russell) Arnold of Highlands, NC and Rita Billingsley (Sebastian) Maseko of Harare, Zimbabwe, Africa; 14 great-grandchildren, five great-great-grandchildren, many nieces and nephews and cousins.

She was also a dedicated member of Scaly Mountain Church of God. Ruby attended school at the old Scaly schoolhouse on Buck knob Road and later at the old Highlands school. She managed the Edwards Hotel on Main Street and Highlands and worked at The Shirt Factory (Clayburne Manufacturing) in Clayton, GA. Because of her lifelong love of cooking, she was employed by the Ravenel and Brockway families, Tate’s Restaurant, Fireside Inn, Dillard House Jr. and the Dillard House. Her recipes have been included in cookbooks and magazines. Ms. Ruby operated the Village Superette and Village Restaurant in Scaly Mountain during the 70s and 80s. She was famous for her “Ruby Rolls”, was an avid gardener and loved needlework.

Ms. Ruby’s family will receive friends and family at 484 Osage Dr. in Rocky knob subdivision off Hale Ridge Road on Sunday and Monday from 12 noon till sunset. They welcome you to join them as they honor her memory at Beck Funeral Home in Clayton, Georgia on Tuesday, August 16, 2016 at 5 PM. The viewing will be from 3 to 5 pm two hours prior to the service on Tuesday. Burial will be at Scaly Mountain Methodist Church on Highway 106.
